Panellets

Panellets are delicious almond sweets originally from Eastern Spain, where they are traditionally eaten around All Saints Day.
Ingredients
- 1 L Water
- 200g Baby Potato
- 200g Caster Sugar
- 250g Ground Almonds
- 1 tablespoon Lemon Zest
- 1 Egg Yolk
- 200g Pine Nuts
- 1 Egg White
Tools
- Spatula
- Oven
- Cooling rack
- Pastry brush

- Kcook bowl
- Colander
- Baking sheet - 18 x 13"
Method
- Pre-heat oven - 200°C
- Fit stir tool to kCook bowl
- Add water and baby potato to the kCook bowl
- Fit kCook bowl to kCook Multi
- Attach lid to kCook bowl
- Boil with filler cap removed - 20 min, 98°C, speed 1
- Drain content of kCook bowl into colander
- Clean kCook bowl
- Fit stir tool to kCook bowl
- Fit kCook bowl to kCook Multi
- Return potatoes to kCook bowl
- Attach lid to kCook bowl with filler cap fitted
- Mix with filler cap fitted - 2 min, speed 12
- Then add caster sugar, ground almonds and lemon zest to the kCook bowl
- Mix with filler cap fitted - 2 min, speed 8
- Roll into balls
- Roll in egg yolk
- Top with pine nuts
- Transfer balls to baking sheet
- Brush with egg white
- Bake - 15 min, 200°C
- Let cool onto cooling rack
- Serve
