Monster Ice Cream Sandwiches

Make these monster cookies using pre-made sugar eyes. Once baked and cooled, sandwich your favourite ice cream between two cookies for a spooky treat at Halloween.
Ingredients
- 100g Unsalted Butter
- 100g Brown Sugar
- 90g Caster Sugar
- 200g All Purpose Flour
- 50g Cocoa Powder
- 1 tablespoon Milk
- 1 Egg
- ¾ teaspoon Baking Powder
- 1 pinch Salt
- Candy as needed

- Parchment paper
- Cooling rack
- Plastic wrap

- Work surface
- Baking sheet - 18 x 13"

Method
- Fit midi blade to kCook bowl
- Add brown sugar, unsalted butter, caster sugar, all purpose flour, cocoa powder, milk, egg, baking powder and salt to the kCook bowl
- Fit kCook bowl to kCook Multi
- Attach lid to kCook bowl with filler cap fitted
- Blend with filler cap fitted - 1 min, speed 12
- Line a clean work surface with plastic wrap
- Transfer content of kCook bowl to work surface
- Roll into a log
- Wrap with plastic wrap
- Chill in fridge - 1 hr
- Pre-heat oven - 160°C
- Line a clean baking sheet with parchment paper then set aside
- Place dough on work surface
- Slice into 1/3" slices
- Transfer cookies to baking sheet
- Bake - 8 min, 160°C
- Decorate with candy
- Bake - 6 min, 160°C
- Let cool baking sheet onto cooling rack
- Serve
