Mojito Cupcakes

These vibrant green mojito cupcakes have a delicious minty cupcake base topped with a buttercream packed with fresh lime juice, zest, and just the right amount of rum for the perfect boozy dessert!
Ingredients
For the cupcakes:
- Caster sugar 200 g
- Unsalted butter 110 g - cubed, at room temperature
- Eggs 2
- Lime juice 3 tsp
- Lime 2 - zest of
- Mint extract 0.25 tsp
- Plain flour 190 g
- Baking powder 1.5 tsp
- Salt 0.6 tsp
- Sour cream 112 g
- White rum 2 Tbsp
- Green food colouring As needed
For the buttercream:
- Unsalted butter 250 g - cubed, at room temp
- Icing sugar 500 g
- White rum 4 Tbsp
- Lime juice 2 Tbsp
- Mint extract 0.25 tsp
For the decoration:
- Lime 1
- Lime 1 - sliced
- Mint leaves As needed
Method
Step 1 - Making the cupcakes:
- Preheat the oven - 175ºC
- Line a cupcake tin with cupcake cases
- Fit the K-Beater
- Add butter and sugar into the appliance bowl
- Mix and then scrape the bowl - 2 minutes, speed 3
- Then add eggs, mint extract, lime juice and lime zest
- Mix – 2 minutes, speed 3
- Then add flour, baking powder and salt
- Mix – 1 minute, speed 1
- Then add sour cream, white rum and green food colouring
- Tip: Aim for a vibrant green colour
- Mix – 2 minutes, speed 2
- Divide the mixture between the cupcake cases
- Bake – 15 minutes, 175ºC
- Remove from the oven and let cool completely
Step 2 – Making the buttercream:
- Clean the appliance bowl and fit the K-Beater
- Add butter, icing sugar, rum, lime juice and mint extract into the appliance bowl
- Mix and then scrape the bowl – 2 minutes, speed 3
- Tip: Start the machine on speed Min and gradually increase speed
- Mix – 2 minutes, speed 1
- Transfer the buttercream into a piping bag fitted with a large open star tip
- Pipe swirls of the buttercream onto each cupcake
- Then zest one lime over the cupcakes
- Decorate with lime slices and mint leaves
