These mini pavlovas are crunchy, fruity, creamy and incredibly easy to make. Decorate with any fruit of your choice and serve as a dessert or as an afternoon tea treat.

  1. Draw 5cm circles onto two sheets of parchment paper, leaving a small gap between each circle
  2. Turn the paper over
  3. Grease and line a clean baking tray with parchment paper
  4. Pre-heat oven - 100°C
  5. Attach Whisk
  6. Add egg white to the Kenwood Bowl
  7. Mix until foamy - 1 min, Speed Max
  8. Add caster sugar to the Kenwood Bowl gradually while machine is running
  9. Mix - 5 min, Speed Max
  10. Transfer meringue to piping bag
  11. Pipe meringue onto baking tray
  12. Bake - 1 hr, 100°C
  13. Remove from oven and let cool
  14. Clean Kenwood Bowl
  15. Attach Whisk
  16. Add whipping cream and icing sugar to the Kenwood Bowl
  17. Mix - 1 min 15 sec, Speed Max
  18. Transfer meringue to piping bag
  19. Chill in fridge until needed
  20. Pipe cream onto meringue
  21. Decorate with strawberries, raspberries and blueberries
  22. Garnish with mint leaves
  23. Dust with icing sugar
  24. Serve
