Milanese Risotto

A traditional dish from the city of Milan. This recipe uses saffron, a popular spice in Italy, adds a stunning yellow colour to this creamy risotto.
Ingredients
- 80g Shallot
- 50g Parmesan Cheese
- 1 tablespoon Olive Oil
- 200g Arborio Rice
- 40ml Dry White Wine
- Salt & Pepper as needed
- 2 pinches Saffron
- 500ml Beef Stock

Method
- Attach the Stir Tool and Stir Assist Clip
- Add olive oil to the Cooking Chef XL Bowl
- Lift the Cooking Chef head and fit the heat shield
- Heat with splashguard fitted - 120°C, Stir 1
- Then add shallot to the Cooking Chef XL Bowl
- Cook with splashguard fitted - 5 min, 120°C, Stir 1
- Then add arborio rice to the Cooking Chef XL Bowl
- Cook with splashguard fitted - 5 min, 110°C, Stir 1
- Then add dry white wine to the Cooking Chef XL Bowl
- Cook with splashguard fitted - 2 min, 104°C, Stir 1
- Then add salt & pepper, saffron and beef stock to the Cooking Chef XL Bowl
- Cook with splashguard fitted - 18 min, 104°C, Stir 2
- Then add parmesan cheese to the Cooking Chef XL Bowl
- Cook with splashguard fitted - 1 min, 90°C, Stir 1
- Serve
