Mango and Coconut Rice Pudding

This tropical dessert is a vibrant twist on a classic rice pudding. Serve with extra honey and top with desiccated coconut and dried mango pieces.
Ingredients
- 150g Mango
- 30g Dried Mango
- 150g Short Grain Rice
- 4 Star Anise Pods
- 2 tablespoons Honey
- 400g Coconut Milk
- 50ml Water
- 4 tablespoons Unsweetened Shredded Coconut

Method
- Attach the Stir Tool and Stir Assist Clip
- Add short grain rice, star anise pod, mango, honey, coconut milk and water to the Cooking Chef XL Bowl
- Lift the Cooking Chef head and fit the heat shield
- Cook with splashguard fitted - 20 min, 104°C, Stir 1
- Serve
- Garnish with dried mango and unsweetened shredded coconut
