Limoncello

Make your own intense lemon flavoured liqueur which can be bottled and given as Christmas gifts. The recipe requires storing in a jar for two weeks, during this time it will need shaking gently every two days before straining and pouring into bottles. Limoncello is best served chilled as an after-dinner treat. This recipe makes enough to fill 6 x 250ml bottles.
Ingredients
- 6 Lemons
- 500g Caster Sugar
- 200g Water
- 1L Vodka

- Cooking chef xl bowl
- Jug

Method
- Attach the Stir Tool
- Add caster sugar and water to the Cooking Chef XL Bowl
- Lift the Cooking Chef head and fit the heat shield
- Cook with splashguard fitted - 15 min, 80°C, Speed 3
- Then add lemon to the Cooking Chef XL Bowl
- Cook with splashguard fitted - 15 min, 98°C, Speed 3
- Then add lemon to the Cooking Chef XL Bowl
- Cook with splashguard fitted - 15 min, 98°C, Speed 3
- Pour mixture into jug
- Add vodka to the jug
- Stir and let cool
- Transfer content of jug to jar and cover
- Shake every two days for two weeks
- Strain mixture into jug through a sieve
- Pour the Limoncello into 6 bottles
- Serve
