This light and lemony dessert that tastes like lemon meringue, will be a perfect addition to any summer party or an ideal refreshing treat on a hot day. Remember to place the bowl in the freezer 24 hours in advance.

  1. Add the ingredients into a medium saucepan
  2. Heat until just below boiling – medium heat
  3. Strain the mixture through a sieve into a jug and let cool
  4. Fit the Whisk Tool
  5. Add the ingredients into the appliance bowl, fit the splashguard
  6. Mix until thick and creamy - 2 minutes, speed 4
  7. While the machine is running, slowly pour the milk mixture
  8. Mix – 3 minutes, speed Min
  9. Transfer the mixture back into the saucepan
  10. Simmer until the mixture can coat the back of a spoon – low heat
  11. Let cool completely
  12. Chill in the fridge – 1 hour
  13. Attach the Frozen Dessert Maker attachment to the machine
  14. Set the speed to Min
  15. Pour the chilled custard mixture into the Frozen Dessert Maker carefully
  16. Mix - 30 minutes, speed Min
  17. Remove the attachment from the machine
  18. Transfer the mixture into an airtight container
  19. Add the ingredients and swirl through the ice cream
  20. Cover with a lid and freeze overnight until set
  21. Serve
