Lamb and Feta Stuffed Flatbreads

This recipe is inspired by Turkish stuffed flatbreads called ‘Gozleme’, they are packed with flavour and the bread is crispy and delicious. They are simple to make once you get confident with rolling the bread dough as thin as you can before adding the filling. This recipe cooks the flatbreads using a frying pan, alternatively bake in a preheated oven at 220°C for 10 minutes.

  1. Attach the Dough Tool
  2. Add all purpose flour and salt to the Cooking Chef XL Bowl
  3. Lift the Cooking Chef head and fit the heat shield
  4. Mix with splashguard fitted - 30 sec, Speed 2
  5. Then add greek yogurt and water to the Cooking Chef XL Bowl
  6. Mix with splashguard fitted until combined - 2 min, Speed 2
  7. Transfer content of Cooking Chef XL Bowl to medium bowl and cover
  8. Clean Cooking Chef bowl
  9. Attach the Stir Tool and Stir Assist Clip
  10. Add olive oil to the Cooking Chef XL Bowl
  11. Heat with splashguard fitted until hot - 2 min, 120°C, Stir 1
  12. Then add onion, garlic clove and red bell pepper to the Cooking Chef XL Bowl
  13. Cook with splashguard fitted until translucent - 5 min, 120°C, Stir 1
  14. Then add ground lamb to the Cooking Chef XL Bowl
  15. Cook until almost cooked - 3 min, 140°C, Stir 1
  16. Cook - 2 min, 120°C, Stir 2
  17. Then add ground coriander, smoked paprika, ground cumin, salt, black pepper, tomato paste and frozen spinach to the Cooking Chef XL Bowl
  18. Cook until tender - 3 min, 140°C, Speed 1
  19. Transfer content of Cooking Chef XL Bowl to heatproof bowl
  20. Set aside and let cool
  21. Add feta cheese, tomato, red onion, mint leaves and fresh parsley to a clean small bowl
  22. Stir until combined then set aside
  23. Transfer dough to lightly floured surface
  24. Divide into 8 equal pieces
  25. Roll out into a rectangle
  26. Spoon about 3 tablespoons of the mince mixture into the middle of the rectangle and spread it out
  27. Sprinkle 2 tablespoons of the feta and herb mixture on top
  28. Fold over the edges of the dough to seal
  29. Fold into thirds
  30. Repeat with the rest
  31. Add vegetable oil to a clean frying pan
  32. Heat in frying pan until hot - medium heat
  33. Transfer shaped dough to frying pan
  34. Fry each side in frying pan until golden brown - approx 3 min
  35. Transfer content of frying pan to serving plate
  36. Cut diagonally
  37. Garnish with lemon and olives
  38. Serve
