A simple to make, and delicious, Key Lime Pie. Made with shortcrust pastry and condensed milk, it's a sweet treat with a sour tang from the limes.

Method

  1. Grease and flour a clean tart pan then set aside
  2. Add milk and egg to a clean jug
  3. Beat until well combined then set aside
  4. Fit midi blade to kCook bowl
  5. Add cake flour, butter, salt and caster sugar to the kCook bowl
  6. Fit kCook bowl to kCook Multi
  7. Attach lid to kCook bowl with filler cap fitted
  8. Blend with filler cap fitted until fine crumbs form then scrape bowl - 40 sec, speed 10
  9. Pour egg mixture into kCook bowl
  10. Mix with filler cap removed - 30 sec, speed 10
  11. Transfer pastry to work surface
  12. Form into a ball
  13. Wrap with plastic wrap
  14. Chill in fridge - 20 min
  15. Transfer pastry to lightly floured surface
  16. Roll out into a circle until 1/8" (5mm) thick
  17. Transfer pastry to tart pan
  18. Line until covered and trim the edges
  19. Prick
  20. Chill in fridge - 10 min
  21. Pre-heat oven - 190°C
  22. Line with parchment paper
  23. Fill with pie weights
  24. Bake - 12 min, 190°C
  25. Remove pie weights
  26. Brush with egg
  27. Bake - 3 min, 170°C
  28. Let cool and continue
  29. Clean kCook bowl
  30. Fit whisk tool to kCook bowl
  31. Add sweetened condensed milk and double cream to the kCook bowl
  32. Fit kCook bowl to kCook Multi
  33. Attach lid to kCook bowl with filler cap fitted
  34. Whisk with filler cap fitted - 3 min, speed 7
  35. Then add lime to the kCook bowl
  36. Whisk with filler cap fitted - 1 min, speed 7
  37. Spoon content of kCook bowl into tart pan
  38. Spread until level
  39. Chill in fridge - 2 hr
  40. Place pie on serving plate carefully
  41. Garnish with crème fraîche and lime zest
  42. Serve
