Marni’s recipe for these decadent jade noodles is a delicious way to bring in the Chinese New Year. Eating noodles during Chinese New Year symbolises longevity and a happy life. Inspired by her Mum’s love for jade jewellery, these vibrant noodles can be rustled up in as little as 30 minutes.

  1. Put the spinach and water in a mini chopper and attach on top of Kenwood Titanium Patissier XL. On the touchscreen, set the speed at level 4 for 2 minutes. Press the start button and blend until smooth.
  2. Put 250 grams of flour, spinach juice and salt into the mixing bowl. Attach the kneading tool choose the minimum speed for 5 minutes. Press start to knead the mixture until it forms the dough.
  3. Remove the kneading tool, take the dough out, then use your hands to shape the dough into a ball.
  4. Return the dough into the mixing bowl cover it with a splash guard. Set the temperature at level 4 for 10 minutes. Press start to begin the proofing process. Once finished, the dough should be pliable and slightly elastic.
  5. Dust some flour on a clean surface, divide the dough into four pieces. Shape each piece into a ball.
  6. Roll each dough into a thin rectangular shape.
  7. Attach the spaghetti maker attachment at the front of the mixer. Set minimum speed and press start.
  8. Gently feed the flattened dough into the spaghetti maker. It's super easy once I slot the sheet in between the spaghetti maker, the mixer will automatically feed the sheet through.
  9. Dust some more flour to separate the noodles. Repeat the same process until it's finished.
  10. You can either cook these gorgeous homemade jade noodles in boiling water for 2 minutes straight away. But I'd like to separate and hang them for 2-3 hours before cooking.
