Hot Pickled Peaches

While pickled fruit might seem a strange condiment, try it alongside barbecued meats, rich stews, or slice thinly to top a burger. The pickle will be ready the next day but will taste best after 3-4 days - if you can wait that long! Make sure your jar is sterilised by running through a dishwasher or rinsing with boiling water and drying in a very low oven, and always leave a gap of around 3cm of air at the top of your jars when filling. This recipe makes enough for one 1000 ml jar.

  1. Add peach and onion to a clean jar
  2. Attach the Stir Tool
  3. Add water, white wine vinegar, apple cider vinegar, white sugar, brown sugar, cinnamon stick, ginger, mustard seeds, red chili, garlic clove and Aleppo pepper flakes to the Cooking Chef XL Bowl
  4. Lift the Cooking Chef head and fit the heat shield
  5. Heat with splashguard fitted until boiling - 6 min, 110°C, Stir 2
  6. Pour content of Cooking Chef XL Bowl into jar
  7. Leave until cool - 1 hr
  8. Refrigerate overnight
  9. Serve
