While pickled fruit might seem a strange condiment, try it alongside barbecued meats, rich stews, or slice thinly to top a burger. The pickle will be ready the next day but will taste best after 3-4 days - if you can wait that long! Make sure your jar is sterilised by running through a dishwasher or rinsing with boiling water and drying in a very low oven, and always leave a gap of around 3cm of air at the top of your jars when filling. This recipe makes enough for one 1000 ml jar.
