A rich and warming aubergine stew with a spicy harissa kick. Leave out the feta topping if you want to make this dish vegan.

  1. Attach the Stir Tool and Stir Assist Clip
  2. Add oil, garlic clove and red onion to the Cooking Chef XL Bowl
  3. Lift the Cooking Chef head and fit the heat shield
  4. Cook with splashguard fitted - 5 min, 140°C, Speed Min
  5. Then add aubergine to the Cooking Chef XL Bowl
  6. Cook with splashguard fitted - 5 min, 140°C, Speed Min
  7. Then add ground coriander, ground cumin, ground cinnamon, cherry tomatoes, Harissa paste and tomato purée to the Cooking Chef XL Bowl
  8. Cook with splashguard fitted - 10 min, 110°C, Speed Min
  9. Then add tinned chopped tomatoes and water to the Cooking Chef XL Bowl
  10. Cook with splashguard fitted - 25 min, 104°C, Speed 1
  11. Then add tinned chickpeas and coriander to the Cooking Chef XL Bowl
  12. Cook with splashguard fitted - 7 min, 100°C, Speed Min
  13. Then add salt & pepper to the Cooking Chef XL Bowl
  14. Serve
  15. Garnish with feta cheese and coriander
