Greek Spiral Salad
Can be served as a light starter or a refreshing accompaniment.
Ingredients
- 2 cucumbers
- 1 green bell pepper
- Half red onion (peeled)
- 8 cherry tomatoes
- 50g black pitted olives
- 50g feta cheese
For the dressing:
- 4 tbsp rapeseed oil
- 3 tbsp white wine vinegar
- 1 tbsp oregano
- 1 tbsp capers
- Seasoning (to taste)

- Kenwood Electric Spiralizer
- Flat Blade
Method
- Spiralize the cucumber using the Flat Blade and place in a bowl.
- Slice the pepper and onion into 3mm thick slices.
- Halve the tomatoes and cut the feta cheese into 1cm cubes.
- Place the ingredients into a bowl.
For the dressing:
- Whisk the oil and vinegar lightly together with a fork.
- Finely chop the herbs and add the herbs, capers and seasoning to the oil.
- Add the dressing to the bowl and leave to marinate at room temperature for 30 minutes before serving.
