These soft, chewy cookies are equally great just out of the oven or a few days after baking. Don't forget to tap the baking tray on a worksurface just before they've finished baking. This helps them spread.

  1. Attach K Beater
  2. Add plain flour, bicarbonate of soda, baking powder, ground ginger, ground cinnamon, ground cloves, ground nutmeg, salt, dark brown sugar, granulated sugar, black molasses, egg, milk and vanilla extract to the Kenwood Bowl
  3. Mix with splashguard fitted - 4 min, Speed Min
  4. Transfer dough to work surface
  5. Wrap with plastic wrap
  6. Chill in fridge - 1 hr
  7. Pre-heat oven - 180°C
  8. Line a clean baking tray with parchment paper
  9. Remove the chilled dough from the fridge
  10. Roll into balls
  11. Place shaped dough on baking tray
  12. Flatten slightly
  13. Bake - 10 min, 180°C
  14. Remove from oven
  15. Lightly tap the baking tray on a worksurface
  16. Place back in the oven
  17. Bake - 2 min, 180°C
  18. Remove from oven and let cool
  19. Serve
