Ginger and Apple Cocktail

This punchy cocktail is deliciously refreshing, using fresh apple and ginger to make a syrup, then increasing the flavours with fresh apple juice and bubbly ginger beer. If you can’t find apple brandy, then regular brandy will be just as delicious, and if you want, you can leave the alcohol out altogether for a bright, warming mocktail everyone can enjoy.

  1. Attach the Stir Tool
  2. Add ginger, apple, water and sugar to the Cooking Chef XL Bowl
  3. Lift the Cooking Chef head and fit the heat shield
  4. Cook with splashguard fitted until syrupy - 15 min, 105°C, Stir 2
  5. Let cool - 5 min
  6. Fit the Knife Blade to the Food Processor attachment
  7. Transfer syrup to Food processor attachment
  8. Mix until smooth
  9. Strain mixture into small bowl through a sieve
  10. Add ice, Apple brandy, dark rum and apple juice to a clean cocktail shaker
  11. Transfer syrup to cocktail shaker
  12. Shake well
  13. Pour cocktail into 8 drinking glasses
  14. Top with ginger beer
  15. Garnish with stem ginger
  16. Serve
