French Onion Soup

French onion soup is an onion and beef broth or beef stock based soup traditionally garnished with gruyère cheese croutons. Here's our version of the popular French dish.

  1. Peel the onions and slice in the Food Processor attachment using the thin slicing disc at speed 3.
  2. Attach the Splashguard and the Stirring Tool, set the temperature to 140ºC and the speed to stirring 1. Add the olive oil and butter. Add the onions and the sugar. Reduce the heat to 100°C and cook for 5 minutes or until they turn a pale brown or golden colour.
  3. Add the wine and cognac and cook for 10 minutes without the Splashguard. Add the stock, bring to the boil and cook for 10 minutes. Reduce the temperature to a simmer, replace the Splashguard and cook gently for 45 minutes. Add seasoning if necessary. Speed: 1Time : 1 hour 10 minutes
  4. Slice some French bread into croutons, rub the garlic into the bread to give flavour. Sprinkle with grated gruyère and brown under the grill. Serve the soup garnished with the croutons.
