Fortune Cookies

Ingredients
- 3 tbsp vegetable oil
- 2 egg whites
- 1 tsp vanilla extract
- 75g caster sugar
- 75g plain flour
- 1 tbsp cornflour
- Sesame seeds (optional)

- Kenwood Chef mixing bowl
- K-beater
Method
- Preheat your oven to 180°C and line a baking sheet with greaseproof paper. Write or print out 12 fortune messages on small, thin strips of paper.
- In the Kenwood Chef mixing bowl, attach the balloon whisk and add the oil, egg whites and vanilla extract, mixing on a medium speed until fully combined and frothy.
- In a separate bowl, sieve the flour and cornflour and add the caster sugar.
- Replace the whisk with the K-beater and add the dry ingredients to your mixing bowl. Mix on a medium speed until fully combined.
- With a metal spoon, spread one tablespoon of mixture onto your baking sheet until you have a 10cm circle.
- Optional, sprinkle the sesame seeds around the edge of the circle. If you prefer to keep the cookies plain, skip this step.
- Repeat this process until you have 4 separate circles on your baking sheet. You will need to cook these in batches.
- Bake in the oven for 5 minutes until just turning golden round the edge.
- Remove from the oven and quickly peel the cookies from the lined tray. Place a fortune strip in the centre, fold the cookie in half and then curl the edges round to resemble the fortune cookie shape, pinching to seal the ends. Put these in a cupcake or muffin tray to set.
- Repeat the process with the rest of your mixture and allow the cookies to set.
