Fluffy Spanish Potatoes
Tender, fluffy potatoes seasoned with Spanish spices that can accompany any meal.
Ingredients
- 900g (2lb) potatoes
- 60ml (4 tbsp) olive oil
- salt and freshly ground black pepper
- 2 cloves garlic, crushed

Method
- Preheat the oven to 190°C/375°F/Gas 5. Cut the potatoes into 4cm (1½ inch) cubes and put them in the potato peeler. Peel until the potatoes become rounded with a fluffy texture.
- Heat the olive oil in a roasting tin for 5 minutes in the oven. Rinse and dry the potato balls then spoon them into the roasting tin, tossing in the oil to coat completely.
- Season liberally with salt and freshly ground black pepper and bake for 30 minutes, until well cooked and golden. Sprinkle with garlic and cook for a further 5 minutes. Serve immediately.
