Cuban style Baby Back Ribs
Succulent pork ribs marinated in a flavourful blend of herbs, best served with rice and beans.
Ingredients
- 2 Kg Baby Pork Ribs
- 5 tsp Salt
- 8 Garlic cloves
- 3 Lemons
- 5 Fresh Oregano sprigs
- 200 ml Sour Orange Juice
Method
- Cut the ribs into three rib sections.
- Peel and chop the garlic.
- Juice the lemon and discard the skin and flesh.
- Destalk the oregano.
- Place the ribs into a container and rub in the salt, reserve in the refrigerator for at least 30 minutes.
- Add the garlic, lemon juice, oregano and orange juice into the blender.
- Attach the lid.
- Switch the blender on and blend until smooth.
- Pour the remaining mixture over the ribs and place in the refrigerator for two to three hours.
- Pre heat the oven 190˚C.
- Drain the ribs from the marinade and place in an ovenproof dish.
- Cover the ribs with aluminium foil, or the dish lid.
- Place in the oven and cook for thirty minutes.
- Remove the foil from the ribs, return them to the oven and cook for another thirty minutes.
- Serve with black beans and rice.
