Cuban style Baby Back Ribs

Succulent pork ribs marinated in a flavourful blend of herbs, best served with rice and beans.

Method

  1. Cut the ribs into three rib sections.
  2. Peel and chop the garlic.
  3. Juice the lemon and discard the skin and flesh.
  4. Destalk the oregano.
  5. Place the ribs into a container and rub in the salt, reserve in the refrigerator for at least 30 minutes.
  6. Add the garlic, lemon juice, oregano and orange juice into the blender.
  7. Attach the lid.
  8. Switch the blender on and blend until smooth.
  9. Pour the remaining mixture over the ribs and place in the refrigerator for two to three hours.
  10. Pre heat the oven 190˚C.
  11. Drain the ribs from the marinade and place in an ovenproof dish.
  12. Cover the ribs with aluminium foil, or the dish lid.
  13. Place in the oven and cook for thirty minutes.
  14. Remove the foil from the ribs, return them to the oven and cook for another thirty minutes.
  15. Serve with black beans and rice.
