Crunchy Coconut Oat Cookies

These crunchy oat cookies are easy, quick and inexpensive to make; a perfect addition to school lunches!




  1. Pre-heat oven - 175°C
  2. Line 2 clean baking sheets with parchment paper
  3. Attach K Beater
  4. Add light brown sugar, salted butter, vanilla extract and caster sugar to the Kenwood Bowl
  5. Mix until light and fluffy - 3 min, Speed 4
  6. Then add cake flour, oats, unsweetened shredded coconut, pecan halves, baking powder, baking soda and egg to the Kenwood Bowl
  7. Mix - approx 30 sec, speed 4
  8. Roll into balls
  9. Flatten gently
  10. Transfer balls to 2 baking sheets
  11. Bake until browned at edges - 15 min, 175°C
  12. Let cool onto cooling rack
  13. Serve
