A delicious and creamy coffee ice cream, perfect served with our mocha sauce.
Ingredients
250g Whole Milk
250g Whipping Cream
70g Espresso
1 tablespoon Coffee Liqueur
4 Egg Yolks
75g Light Brown Sugar
1 teaspoon Vanilla Extract
1 teaspoon Salt

Cooking Chef XL
Cooking chef xl bowl
Large mixing bowl
Large glass bowl
Plastic container
Method
Attach the Stir Tool and Stir Assist Clip
Add whole milk, whipping cream, espresso and coffee liqueur to the Cooking Chef XL Bowl
Lift the Cooking Chef head and fit the heat shield
Cook with splashguard fitted - 3 min, 85°C, Stir 1
Transfer milk mixture to large mixing bowl
Clean Cooking Chef bowl
Attach the Stir Tool and Whisk
Add egg yolk, light brown sugar, vanilla extract and salt to the Cooking Chef XL Bowl
Whisk with splashguard fitted - 1 min, Speed 4
Transfer milk mixture to Cooking Chef XL Bowl while machine is running
Mix with splashguard fitted - 1 min, Speed 4
Cook with splashguard fitted - 6 min, 95°C, Stir 1
Strain milk mixture into large glass bowl
Let cool completely
Transfer milk mixture to plastic container and cover
Freeze
Clean Cooking Chef bowl
Attach the Whisk
Transfer ice cream to Cooking Chef XL Bowl
Mix with splashguard fitted - 10 sec, Speed 1
Mix with splashguard fitted - 10 sec, Speed 1
Transfer ice cream to plastic container
Freeze
Repeat this freezing and whisking process 2-3 times until set
Serve
