A delicious and creamy coffee ice cream, perfect served with our mocha sauce.

Method

  1. Attach the Stir Tool and Stir Assist Clip
  2. Add whole milk, whipping cream, espresso and coffee liqueur to the Cooking Chef XL Bowl
  3. Lift the Cooking Chef head and fit the heat shield
  4. Cook with splashguard fitted - 3 min, 85°C, Stir 1
  5. Transfer milk mixture to large mixing bowl
  6. Clean Cooking Chef bowl
  7. Attach the Stir Tool and Whisk
  8. Add egg yolk, light brown sugar, vanilla extract and salt to the Cooking Chef XL Bowl
  9. Whisk with splashguard fitted - 1 min, Speed 4
  10. Transfer milk mixture to Cooking Chef XL Bowl while machine is running
  11. Mix with splashguard fitted - 1 min, Speed 4
  12. Cook with splashguard fitted - 6 min, 95°C, Stir 1
  13. Strain milk mixture into large glass bowl
  14. Let cool completely
  15. Transfer milk mixture to plastic container and cover
  16. Freeze
  17. Clean Cooking Chef bowl
  18. Attach the Whisk
  19. Transfer ice cream to Cooking Chef XL Bowl
  20. Mix with splashguard fitted - 10 sec, Speed 1
  21. Mix with splashguard fitted - 10 sec, Speed 1
  22. Transfer ice cream to plastic container
  23. Freeze
  24. Repeat this freezing and whisking process 2-3 times until set
  25. Serve
