Chocolate and Date Pudding

This pudding is great for after dinner. It uses the natural sweetness of dates instead of sugar, to reduce the sugar further use a higher percentage chocolate.
Ingredients
- 600g Water
- 190g Dates
- 75g All Purpose Flour
- 150g Ground Almonds
- 20g Cacao Powder
- 1 ½ teaspoons Vanilla Extract
- 1 teaspoon Baking Soda
- 110g Coconut Oil
- 60g Dark Chocolate Chips
- 6 Eggs
- 300g Buttermilk
- 125g Almond Butter
- 4 tablespoons Maple Syrup
- ½ teaspoon Sea Salt
- 70g Water

Method
- Pre-heat oven - 180°C
- Add dates and water to a clean jug and cover
- Let rest - 10 min
- Drain
- Chop coarsely
- Fit kCook bowl to kCook Multi
- Transfer soaked fruit to kCook bowl
- Fit stir tool to kCook bowl
- Add all purpose flour, ground almonds, cacao powder, vanilla extract, baking soda, coconut oil, dark chocolate chips, egg and buttermilk to the kCook bowl
- Attach lid to kCook bowl
- Mix with filler cap removed - 3 min, speed 6
- Transfer content of kCook bowl to baking dish
- Bake - 55 min, 180°C
- Remove from oven and let cool
- Clean kCook bowl
- Fit max blade to kCook bowl
- Add almond butter, maple syrup, sea salt, water and vanilla extract to the kCook bowl
- Fit kCook bowl to kCook Multi
- Attach lid to kCook bowl with filler cap fitted
- Blend with filler cap fitted - 1 min, speed 12
- Transfer content of kCook bowl to baking dish
- Serve
