Chilli Biscuits
Savoury biscuits infused with a spicy chili flavour, providing a twist to a classic baked treat. Pairs well with cheese.
Ingredients
- 175g (6 oz) plain flour
- 2.5ml (1/4 tsp) chilli powder
- pinch of salt
- 100g (4 oz) butter, softened
- 50g (2 oz) parmesan cheese
- 1 egg yolk
- beaten egg, to glaze
Method
- Preheat the oven to 200°C, 400°F, Gas Mark 6. Lightly grease a baking sheet. Sift the flour, chilli powder and salt into the bowl. Add the butter, 40g (11/2 oz) of the cheese, egg and 15ml (1tbsp) water.
- Fit the K-beater and beat on speed min for 1 minute, increase to speed 1 for 20 seconds, until a soft dough forms. Turn out onto a lightly floured work surface and roll out to 3mm (1/8 in) thick. Using a 6cm (2 1/2in) round cutter, cut out about 18 biscuits.
- Place on a baking sheet, brush with beaten egg and sprinkle over cheese. Bake for 8-10 minutes, until golden. Leave to cool in the baking sheet for 10 minutes, then transfer to a wire rack to cool completely. Serve with cheese.
