Cheesy Vegetable Quesadillas

This recipe is packed with finely diced carrot, onion, courgette, pepper, and sweet potato, making it a great dinner for anyone who is suspicious of vegetables as they’re covered in melty cheese and folded into a warm, crispy tortilla. Flavoured with chipotle paste for a smoky kick, this recipe will become your new go-to weeknight dinner as it’s so simple to prepare and cook.




  1. Assemble the Food Processor attachment to the machine
  2. Fit the Knife blade to the machine
  3. Add sweet potato, carrot, red onion, courgette and red bell pepper to a clean food processor bowl
  4. Attach the lid and ensure it is locked in place
  5. Chop until fine
  6. Transfer content of food processor bowl to medium bowl then set aside
  7. Remove the attachment from the machine
  8. Attach the Stir Tool
  9. Add olive oil to the Cooking Chef XL Bowl
  10. Lift the Cooking Chef head and fit the heat shield
  11. Heat with splashguard fitted until hot - 1 min, 120°C, Speed OFF
  12. Transfer content of medium bowl to Cooking Chef XL Bowl
  13. Cook with splashguard fitted until softened - 5 min, 130°C, Stir 2
  14. Then add chipotle paste, salt and canned black beans to the Cooking Chef XL Bowl
  15. Remove the splash guard
  16. Cook until thickened - 5 min, 130°C, Stir 2
  17. Add corn tortilla to a clean work surface
  18. Transfer mixture to tortillas
  19. Top with mozzarella cheese
  20. Fold in half and press down gently to keep the filling compact
  21. Heat a large frying pan over a medium-high heat
  22. Transfer tortillas to frying pan
  23. Cook in frying pan - 2 min
  24. Repeat with the rest
  25. Serve with Salsa and cilantro
