Ingredients
- 200g broccoli florets and stalks
- ½ onion, finely chopped
- ½ bunch coriander
- Juice of 2 lemons
- 1 red chilli pepper, chopped
- Salt and pepper
Method
Bring a pot of water to the boil and blanch the broccoli for 2 minutes. Strain and run under cold water.
Then add to a blender and pulse into a paste, add the onion, coriander, lemon juice and chilli pepper and blend into the desired consistency (I like mine chunky). Season with salt and pepper and that’s it.
