This delicious cheese and olive bread is a great addition to a tapas spread.




  1. Flour a clean baking sheet
  2. Attach the Dough Tool
  3. Add fresh yeast, water and olive oil to the Cooking Chef XL Bowl
  4. Lift the Cooking Chef head and fit the heat shield
  5. Heat with splashguard fitted - 3 min, 30°C, Speed OFF
  6. Then add bread flour and salt to the Cooking Chef XL Bowl
  7. Mix with splashguard fitted - 1 min, Speed Min
  8. Then add gruyère cheese and green olives to the Cooking Chef XL Bowl
  9. Mix with splashguard fitted - 9 min, Speed 1
  10. Remove the Dough Tool
  11. Prove with splashguard fitted - 1 hr, 30°C, Speed OFF
  12. Transfer dough to lightly floured surface
  13. Shape the dough into a ball
  14. Divide the dough into 4 equal pieces
  15. Let rest - 10 min
  16. Shape each piece of dough into an oval
  17. Transfer dough to baking sheet
  18. Let rise - 1 hr
  19. Pre-heat oven - 190°C
  20. Brush with water
  21. Sprinkle with gruyère cheese
  22. Bake - 20 min, 190°C
  23. Let cool slightly
  24. Serve
