Packed full of nutritious goodness, our super tasty veggie burgers are stuffed with hearty black beans, mushrooms and earthy-sweet beetroot. These speedy patties are blitzed together before being griddled or, weather permitting, seared on the BBQ!

Method

  1. Add the onion, garlic, and mushrooms to your food processor with the blade attachment, and process until finely chopped.
  2. Add the sweet potato and black beans, and blitz for about 5-10 seconds.
  3. Fit the processor with the large grater attachment and grate beetroots into the mixture. Remove the grater attachment.
  4. Add lime zest, salt, pepper, flour and oats and pulse a few times with the blade attachment to combine.
  5. Divide mixture into 6 or 8 pieces, depending on the desired patty size, then wet your hands with water and shape each into a patty. Dust each with a bit more flour, then chill in the fridge for about 30 minutes.
  6. To cook the patties, heat a large non-stick frying pan over medium heat. Drizzle with olive oil, then arrange the patties in the pan. Reduce heat to medium-low and leave to cook for about 8 minutes. Turn the patties over and cook for another 8 minutes.
  7. To serve, spread burger sauce on the bottom half of the burger buns, top with a veggie patty, then top with a good handful of rocket. Spread a little more burger sauce on the top halves of the bun and place on top.
  8. Also delicious with classic burger toppings like tomato, pickles, onion and shredded lettuce.
