Why is my unit not allow me to go to an higher speed?

The Cooking Chef is equipped with a safety device that prevents using the stand mixer at a higher speed while the unit is being used for cooking and the temperature reaches over 140F (60C).
If temperature cools down lower than that limit the unit will be back to the maximum speed.
