If the bread does not rise enough and has a dense texture try increasing the water next time by 15mls (3 teaspoons) and the yeast by half a teaspoon. The recipes included in our book are based on supermarket branded flour such as Tesco and Waitrose etc. For best results warm rather than cold water should be used, as warmer water will activate the yeast quicker on the rapid cycle.
