Pancakes with maple syrup
Ingredients
- 250ml buttermilk
- 2 tbsp vegetable oil
- 2 eggs
- 200g flour
- 2 tsp baking powder
- 1 tsp bicarbonate of soda
- 1 tbsp sugar
TO SERVE
Maple syrup
Butter
Icing sugar to dust
Method
- Attach the K beater and pour the milk, oil and eggs into the bowl and mix togetheron a medium speed.
- Add the flour, baking powder, soda and sugar to the bowl mix gently until everything is just combined. It should still be a little lumpy.
- Heat a flat pan with a little oil and spoon in enough batter to make an 8cm pancake. Cook for a couple of minutes until bubbles start toappear on the surface.
- Flip over with a spatula and cook for a further 2 minutes.
- Serve a few piled up on plate with a drizzle of maple syrup and butter (or fresh fruit) then dust with icing sugar.
