Ingredients 1
Plain flour 300 grams
Baking powder 3 1/2 tsp.
Light muscovado sugar 300 grams
Mixed spice 3 tsp.
Bicarbonate of soda 2 tsp.
Sultanas 175 grams
Salt 1 pinch
Ingredients 2
Butter 200 grams
Eggs 4 beaten
Orange 1
Orange juice 1 Tbsp.
Ingredients 3
Pumpkin 500 grams
Ingredients 4
Orange juice 2 Tbsp.
Ingredients 5
Cream cheese 200 grams
Butter 85 grams
Icing sugar 100 grams
Orange 1
Orange juice 4 Tbsp.
Prep. (Before you begin)
1- Melt the butter.
2- Zest the oranges.
3- Peel, deseed and grate the pumpkin.
Getting started
1- Pre heat the oven to 180°C.
2- Grease a square tin and line with parchment paper.
3- Fit the K beater to the machine.
Stage 1
1- Add Ingredients 1 (flour, baking powder, sugar, mixed spice, bicarbonate of soda, sultanas, salt) into the Mixer bowl.
2- Attach the Mixer bowl to the machine and fit the splash guard.
3- Mix on speed 2 for about 2 minutes
Stage 2
1- Add Ingredients 2 (butter, eggs, zest, juice) to a medium bowl.
2- Mix until combined.
3- Transfer contents of the medium bowl to the Mixer bowl.
4- Mix on speed 3 for about 3 minutes.
Stage 3
1- Add Ingredients 3 (pumpkin) into the Mixer bowl.
2- Attach the Mixer bowl to the machine.
3- Mix on speed 2 for about 2 minutes
4- Pour the mixture into the square tin.
5- Bake for 1 hour at 180°C or until a skewer tests clean.
Stage 4
1- Whilst the cake is still warm, turn out onto a cooling rack.
2- Poke holes with a skewer all over the cake.
3- Drizzle with Ingredients 4 (orange juice).
4- Leave to cool.
Stage 5
1- Retrieve, clean the Mixer bowl and fit the K beater.
2- Add Ingredients 5 (cheese, butter, sugar, zest, juice) into the Mixer bowl.
3- Attach the Mixer bowl to the machine.
4- Mix on speed 3 for about 4 minutes until smooth.
5- Chill for 30 minutes.
6- Retrieve the icing and quickly beat.
7- Spread the icing on top of the cake, finishing with peaks.
8- Serve.
