Pistachio and Fruit ‘Slice and Bake’ Cookies

Ingredients

50 g pistachios
30 g raisins
90 g dried fruits


175 g butter, cubed, at room temperature
225 g plain flour
85 g brown sugar
0.5 tsp. vanilla extract
1  rum, optional

Instructions

STEP 1/5

Line the baking tray with parchment paper

Assemble the food processor bowl onto the power unit

Fit the Knife blade to the food processor bowl

STEP 2/5

Add Ingredients 1 (pistachios, raisins, dried fruit) into the food processor bowl

Attach the lid and ensure the pusher is in the feed tube

Pulse until roughly chopped

Transfer the mixture into a small bowl and set aside

STEP 3/5

Add Ingredients 2 (butter, flour, sugar, vanilla extract, rum) into the food processor bowl

Attach the lid and ensure the pusher is in the feed tube

Chop until the mixture comes together and the dough has nearly formed

Transfer the chopped fruit and nut mixture into the food processor bowl

Mix until a dough formed

Transfer the dough to a large bowl

Knead until fully incorporated

Shape the dough into a log, approx. 6cm in dimension

Wrap in cling film

Chill in the fridge for 1 hour

STEP 4/5

Preheat the oven to 180ºC

Add Ingredients 3 (pistachios) into the mill jar

Attach the blade assembly and screw onto the jar

Ensure it is securely closed

Attach the mill to the power unit and ensure it is locked into place

Pulse until roughly chopped

Remove the mill jar and set aside

Retrieve the chilled dough from the fridge

Slice into rounds until 1cm thick

Press the chopped pistachios into the edge of each cookie

Place the cookies on the prepared baking tray

Bake at 180ºC for 12-15 min until golden

Remove from the oven and let cool completely

STEP 5/5

The cookie dough can be frozen for up to 3 months
