Ingredients

Servings: 4

3  vegetable oil


150 grams onions
175 grams leek
2  garlic cloves
2 tsp. ground coriander
2 tsp. ground cumin
0.5 tsp. chilli flakes
1 tsp. ground cinnamon


400 grams tinned chopped tomatoes
100 grams dried red lentils
400 grams sweet potatoes
400 grams tinned chickpeas
200 grams red peppers
1  orange
400 grams vegetable stock, hot


Instructions

STEP 1/6

Peel and trim the onions and slice.

Trim the leeks and slice.

Peel, destem and finely slice the garlic.

Peel and cut the potatoes into 1 cm cubes.

Destem and deseed the pepper and cut into 2 cm cubes.

Peel the orange with a vegetable to make thick slices of peel.

STEP 2/6

Lift the Cooking Chef head and fit heat guard.

Fit the Stir tool and assist clip to the machine.

STEP 3/6

Attach the Mixer bowl to the machine.

Add Ingredients 1 (oil) into the Mixer bowl, fit the splash guard.

Heat at 120ºC on speed 4.

STEP 4/6

Add Ingredients 2 (onion, leek, garlic, dried spices) to the bowl.

Heat at 120ºC, on speed 4 for about 10 minutes.

STEP 5/6

Add Ingredients 3 (tomatoes, lentils, potato, chickpeas, peppers, orange peel, stocks) into the Mixer bowl.

Heat at 98ºC, on speed 3 for about 60 minutes.

Discard the orange peel.

Serve.

STEP 6/6

Garnish with coriander.
