Five Ingredient Spicy Tomato Sauce for Pasta

A delicious tomato sauce made with roasted tomatoes.

Ingredients

15  plum tomatoes, halved
150 g onions, roughly chopped
50 ml extra virgin olive oil
5  garlic cloves, whole, peeled
2 tsp chilli flakes


Instructions

STEP 1/2

Preheat the oven to 200ºC.
Add tomatoes, onion, olive oil, garlic cloves and chilli flakes to a baking tray and mix to combine.
Roast until the tomatoes and onions are soft and starting to char for 30-45 minutes at 200ºC.
Remove from the oven and let cool slightly.

STEP 2/2

Transfer the roasted vegetables into the Blender.
Pulse until smooth.
Tip: Add more olive oil if the sauce is too thick or any remaining juice from the tinned tomatoes if you used some.
Season to taste with salt and pepper.
Transfer the sauce into a saucepan.
Tip: Make pasta while you re-heat the sauce.
Heat on a medium-high heat.

 

To serve
Serve with pasta, grated Parmesan cheese and fresh herbs

 

Substitutions
Fresh plum tomatoes can be replaced with tinned plum tomatoes.
Dried chilli flakes can be replaced with fresh chilli.


Depending on the sweetness of your tomatoes, you may need to season the sauce with a little bit of sugar. The sugar balances the acidity of the tomatoes, giving the sauce a greater depth of flavour. Once the sauce is finished, adjust the seasoning to suit your taste, add any fresh or dried herbs if you have them. You can also use tinned plum tomatoes, drained and rinsed, reserving the juice from the tins to loosen the sauce or to use in another recipe.
