Raspberry Mocha Parfaits

Ingredients

Servings: 4
Makes:

170 grams icing sugar
2  cocoa powder
2 tsp. instant espresso granules


140 grams chocolate sandwich cookies


230 grams cream cheese
260 grams whipping cream
1 tsp. vanilla extract


130 grams fresh raspberries
1  lemon jucie
3  icing sugar
20 grams water


100 grams fresh raspberries
2  icing sugar
20 grams dark chocolate


Instructions

STEP 1/7

Grate the dark chocolate.

STEP 2/7

Fit the Knife blade to the food processor bowl.

STEP 3/7

Add Ingredients 1 (sugar, cocoa, espresso granules) into the food processor bowl.

Attach the lid and ensure it is locked into place.

Blend until a fine powder is formed.

Transfer to a medium bowl and set aside.

STEP 4/7

Add Ingredients 2 (cookies) to the food processor.

Blend until fine crumbs form.

Transfer to a clean medium bowl.

STEP 5/7

Clean the food processor and fit the Whisk tool.

Add the processed powders to the food processor.

Add Ingredients 3 (cheese, cream, vanilla) into the food processor.

Whisk on speed 4 for 1 minute.

Scrape down the sides of the bowl with a spatula.

Whisk for 30 seconds more.

Transfer to a piping bag and set aside.

STEP 6/7

Attach the blender attachment to the food processor.

Add Ingredients 4 (raspberries, lemon juice, sugar, water) to the blender.

Blend until puréed.

Assemble the parfait.

Begin with a layer of chocolate crumbs.

Add a layer of mocha cream.

Add a layer of coulis.

Repeat the layers twice more.

Serve immediately or chill until required.

STEP 7/7

Top with the Garnishes (raspberries, chocolate, icing sugar).
