Ingredients

Makes: 40 fritters

400 g tomatoes, deseeded
400 g tomatoes, deseeded, finely chopped
0.5 tsp fine sea salt
300 g red onion, peeled, quartered
400 g feta cheese, crumbled
10 g fresh mint, finely chopped
10 g fresh parsley, finely chopped
2 tsp dried oregano
2  eggs, beaten
200 g plain flour
2 tsp baking powder
0.5 tsp fine sea salt
0.5 tsp ground black pepper
  olive oil, as needed


Tools

  • Food Processor Attachment
  • Coarse Grating Disc
  • K-Beater

Utensils

  • Frying pan

Instructions

STEP 1/3

Fit the Coarse Grating Disc to the Food Processor attachment.

Prepare tomatoes for the attachment.

Grate tomatoes into the attachment on speed 1.

Strain the grated tomatoes into a colander.

Add the finely chopped tomatoes and sea salt and stir to combine.

Let drain for 30 minutes.

STEP 2/3

Prepare onion for the attachment.

Grate red onion into the attachment on speed 1.

Transfer the onion into the appliance bowl.

Fit the K-Beater.

Add the drained tomatoes, feta, mint, parsley, oregano and eggs.

Mix for 30 seconds on speed Min, until just combined.

Add flour, baking powder, salt and pepper.

Mix for 30 seconds on speed Min, until just combined.

Tip: If the mixture isn’t firm enough to hold its shape, add a little more flour until the right consistency is achieved.

Chill in the fridge for 30 minutes.

STEP 3/3

Line a plate with paper towels.

Add olive oil into a frying pan, enough to cover the base.

Heat on a medium heat until hot.

Dip a dessert spoon in water and add spoonfuls of the tomato mixture into the pan, spacing them apart.

Fry for 2 minutes on a medium heat, until golden brown.

Flip over and fry on the other side for 3 minutes on a medium heat, until golden brown and cooked through.

Transfer the fritters to the plate.

Repeat the same process with the remaining mixture, adding more oil into the frying pan, if needed.

 

Serve.
