Tomato Relish

A sweet and spicy tomato relish. Spread on a brioche bun for a great addition to a burger or served with white fish as a quick dinner idea.

Ingredients

Servings: 8
Makes:

4  olive oil


2  garlic clove
1  red onion
10 g ginger
0.5 tsp. chilli flakes
0.25 tsp. paprika
1  bay leaf
1 tsp. peppercorns
2  star anise


750 g cherry tomatoes
3  brown sugar
4  red wine vinegar
0.5 tsp. salt


Instructions

STEP 1/5

Peel, destem and crush the garlic.

Peel the onion and finely slice.

Peel the ginger and finely chop.

Cut the tomatoes in quarters.

Sterilise the jars.

STEP 2/5

Lift the Cooking Chef head and fit the heat shield.

Fit the stir tool to the machine.

STEP 3/5

Attach the Cooking Chef bowl to the machine and fit the Stir assist clip.

Add Ingredients 1 (olive oil) into the Cooking Chef bowl, fit the splash guard.

Cook at 100ºC on Stir Speed 1 for 1 minute until hot.

STEP 4/5

Add Ingredients 2 (garlic, onion, spices) to the bowl.

Cook at 95ºC on Stir Speed 1 for 6 minutes until translucent.

STEP 5/5

Add Ingredients 3 (tomatoes, sugar, vinegar, salt) to the bowl.

Cook at 95ºC on Stir Speed 1 for 40 minutes until the liquid evaporated.

Remove the splash guard.

Cook at 105ºC on Stir Speed 1 for 5 minutes until thickened.

Transfer the mixture into the sterilised jars and leave to cool.

Refrigerate until ready to use.
