Chimichurri

This popular Argentinian sauce is the perfect accompaniment to fried steaks or any grilled meat. It’s easy to make and can also be served as a dressing on salads or used as a marinade.

Ingredients

Servings: 2

For the sauce
60 ml olive oil
2 Tbsp red wine vinegar
100 g parsley, destalked
2  garlic cloves, peeled, destemmed, finely chopped
1  red chilli
0.75 tsp dried oregano
1 tsp salt
0.5 tsp pepper

For the steak
1  rump steak
  kosher salt, as needed
  pepper, as needed, freshly ground
  oil, as needed

To finish
1  baguette
  mixed salad leaves, as needed
  sriracha mayo, as needed


Instructions

STEP 1/4

Add olive oil, vinegar, parsley, garlic, chilli, oregano, salt and pepper into a small bowl
Mix to combine and let rest for 10 minutes

STEP 2/4

Transfer the mixture into the mill jar
Attach the Mini Chopper attachment to the machine
Blend on speed Max until smooth
Remove the attachment from the machine and set aside

STEP 3/4

Rub steak with kosher salt, pepper and oil
Heat a large frying pan over a medium heat until hot
Fry steak until it is done to your liking
Transfer steak onto a cutting board
Slice steak into strips

STEP 4/4

Open the baguette
Drizzle with sriracha mayo
Add leaves and steak
Top with chimichurri sauce
