Vegan Poke Bowl

Combining protein-packed tofu with brown rice and lots of colour and crunch, this plant-based version of the popular Hawaiian dish is super nutritious and filling. Using the continuous slicer-grater attachment with your stand mixer will help make light work of all the prep, as you seamlessly swap between the different plates to slice, dice and shred the different veg  in no time. Experiment with flavour and texture by swapping in different vegetables- shredded red cabbage or sliced spring onion would also work well.
