Level up your summer BBQ sides with this bright, zingy potato salad. Creamy avocado, zesty lime, garlic, chilli and fresh herbs are blitzed to create the delicious dressing, which coats the gently simmered potatoes for the perfect summer side dish. Any leftovers will keep for up to two days in the fridge.




  1. Add the ingredients into a large saucepan
  2. Heat until boiling – high heat
  3. Simmer until just cooked through – 15 minutes, medium-low heat
  4. Drain the potatoes into a colander and run under cold water until cooled
  5. Transfer to a large bowl and set aside
  6. Add the ingredients into the Blender attachment
  7. Blend until smooth – 1 minute, speed 3
  8. Remove the attachment from the machine
  9. Pour the dressing over the potatoes and mix well
  10. Chill in the fridge – 1 hour
  11. Serve
