Ingredients

9 egg yolks
2 egg
3/4 cup sugar
1/2 tsp vanilla extract
2/3 cup passion fruit puree
12 tablespoons unsalted butter, cut into 1-inch chunks

Method

1 - In a thick based saucepan, add the egg yolks, whole egg, sugar, vanilla, and passion fruit puree and whisk together
2 - Gently heat over medium-low heat, whisking constantly, until the mixture has thickened, approximately 8 - 10 minutes
3 - Immediately pass through a fine mesh sieve and stir in the butter
4 - Preheat the oven to 160°c
5 - Place the prepared tart shell on a baking sheet, pour the passion fruit curd into the tart shell, and bake until the curd sets, approximately 12-15 minutes
6 - To test if ready, gently tap the edge of the tart pan to see if the center of the tart wobbles, it should wobble a little bit not overly, let cool to room temperature
7 - Finish it off with some fresh passionfruit and some whipped cream
