Add water into a large saucepan.
Heat until boiling on a high heat.
Add gnocchi.
Cook for 3 minutes on a medium-high heat.
Drain the gnocchi, reserving 150 ml of the cooking water.
Add the reserved water into a jug.
Transfer the gnocchi back into the saucepan.
Cover with a lid to keep warm.
Fit the Grating Disc.
Grate Pecorino and 50 g Parmesan cheese into the Appliance bowl on speed 1.
Remove the Grating Disc, fit the Knife Blade.
Add gochujang and black pepper into the Appliance bowl.
Blend until smooth on speed 1.
Add the reserved 150 ml of the cooking water slowly while the machine is running.
Mix until emulsified and thickened for about 1 minute on speed 1.
Transfer the mixture into the saucepan.
Mix well until combined with gnocchi.
Divide the gnocchi between serving bowls.
Top with spring onions and grated Parmesan (optional).
Serve.
