370 g gluten free plain flour
275 g yellow cornmeal
125 ml oil
1 tsp salt
250 ml hot water


Instructions

STEP 1/4

Fit the Lasagne Roller attachment to the machine
Adjust the setting to 0
Sprinkle some flour between the rollers

STEP 2/4

Add the flour, cornmeal, oil and salt into a large bowl
Mix until combined

STEP 3/4

Add the water into the large bowl
Mix until a dough forms
Cover the bowl with a tea towel
Let rest for 20 minutes

STEP 4/4

Divide the dough into 12 equal portions
Roll out each dough piece into a ball
Cover with a tea towel and set aside
Take one dough ball and flatten into a disc
Transfer the dough into the Lasagne Roller attachment
Pass the dough through the rollers
Fold the dough in half
Repeat passing the dough through the rollers, adjusting the setting up each time until you reach setting 3

 

Transfer the dough to a lightly floured work surface
Using a knife, cut out circles in your desired size
Place a heavy based pan or cast-iron skillet over a high heat
Cook the tortillas for about 30 seconds on each side
