400 g peaches, stoned, coarsely sliced
400 g caster sugar
10 g ginger, sliced
50 g water
400 g Champagne vinegar

Instructions

STEP 1/3

Add peaches, sugar and ginger into the Blender.

Blend on speed Max until smooth.

STEP 2/3

Strain the mixture through a muslin cloth into a jug.

Add vinegar into the jug and stir to combine.

STEP 3/3

Pour the mixture into a sterilised 1-litre bottle.

Chill in the fridge for 72 hours before serving.


This recipe requires 72 hours of chilling time before serving. Put the shrub in a 1 litre sterilised bottle and store in the fridge for up to one month.
