Lemon Meringue Pie Ice Cream

This light and lemony dessert that tastes like lemon meringue, will be a perfect addition to any summer party or an ideal refreshing treat on a hot day.

Ingredients

Servings: 6
Makes: 1

300 g whole milk
325 g single cream
1 tsp vanilla extract
3  egg yolks
150 g caster sugar
100 g lemon curd
  meringue nests, as needed, broken up


Instructions

STEP 1/3

Add milk, cream and vanilla into a medium saucepan
Heat until just below boiling – medium heat
Strain the mixture through a sieve into a jug and let cool

STEP 2/3

Fit the Whisk Tool
Add egg yolks and caster sugar into the appliance bowl, fit the splashguard
Mix until thick and creamy – 2 minutes, speed 4
While the machine is running, slowly pour in the milk mixture
Mix – 3 minutes, speed Min
Transfer the mixture back into the saucepan
Simmer until the mixture can coat the back of a spoon – low heat
Let cool completely
Chill in the fridge – 1 hour

STEP 3/3

Attach the Frozen Dessert Maker attachment to the machine
Set the speed to Min
Pour the chilled custard mixture into the Frozen Dessert Maker attachment carefully
Mix – 30 minutes, speed Min
Remove the attachment from the machine
Transfer the mixture into an airtight container 
Add lemon curd and broken up meringue nests and swirl through the ice cream
Cover with a lid and freeze overnight until set

 

Serve


Remember to place the bowl in the freezer 24 hours in advance.
