Korean Meatballs

Based on the recipe for Tteok-galbi patties, this recipe uses diced beef, minced in the Food Processor, infused with ginger, garlic, soy and mirin.

Ingredients

Servings: 4
Makes: 12
For the onion
0.5 Tbsp vegetable oil
75 g onion, peeled, finely chopped

For the patties
400 g beef, diced
30 g plain flour
15 g honey
30 ml soy sauce
1 Tbsp mirin
2  garlic cloves, peeled, stem removed, crushed
1 tsp ginger, peeled, grated
1 tsp sesame oil
0.5 tsp salt

For the glaze
2 Tbsp soy sauce
3 Tbsp honey

To finish
40 g nuts, chopped
  sesame seeds, as needed
  spring onion, as needed, sliced


Instructions

STEP 1/4

Preheat the oven to 200ºC
Line a baking tray with parchment paper
Assemble the Food Processor bowl onto the power unit
Fit the Knife Blade to the Food Processor bowl

STEP 2/4

Place a small frying pan over a medium-high heat
Add oil into the frying pan
Heat until hot
Add finely chopped onion into the frying pan
Sauté for 5 mins until softened
Remove the frying pan from the heat and set aside

STEP 3/4

Weigh beef into the Food Processor bowl
Attach the lid and ensure the pusher is in the feed tube
Mix until roughly chopped
Weigh in flour, honey, soy sauce, mirin, garlic, ginger, sesame oil and salt into the Food Processor bowl
Transfer the cooked onions into the Food Processor bowl
Attach the lid and ensure the pusher is in the feed tube
Pulse until combined

 

Form the mixture into balls
Place on the prepared baking tray
Bake at 200ºC for 10 minutes
Alternatively grill under a hot grill (200ºC) for 4-5 mins on each side, turning halfway through

STEP 4/4

Add honey and soy sauce into a small bowl
Stir to combine
Remove the meatballs from the oven
Immediately, glaze over the meatballs using a pastry brush

 

To finish
Place the meatballs on a serving plate
Sprinkle with finely chopped nuts or sesame seeds and sliced spring onions

 

To serve
Serve with rice

 

Substitutions:
Grated ginger can be replaced with 1 tsp of ginger puree
