Greek Fava Dip

Made with yellow split peas, fava is a creamy mezze dip from the island of Santorini flavoured with garlic, vegetables, bay leaves and lemon. Serve with warm toasted pita or crunchy vegetable crudites.

Ingredients

Servings: 6
Makes:

2000 g water, hot
200 g yellow split peas
2 Tbsp olive oil
150 g onions, coarsely chopped
100 g carrots, peeled, coarsely chopped
2  garlic cloves, coarsely chopped
0.5 tsp fine sea salt
0.5 tsp granulated sugar
2  bay leaves
700 g vegetable stock, hot
1  lemon, zest of, juice of
4 Tbsp extra virgin olive oil


Tools

  • Stir Tool
  • Food Processor Attachment
  • Knife Blade

Utensils

  • Colander

Instructions

STEP 1/3

Fit the Stir Tool.

Add water into the appliance bowl, fit the splashguard.

Heat for 5 minutes at 140ºC, speed Off, until boiling.

Add peas.

Stir for 1 minute on speed Stir 1 to remove impurities.

Drain onto colander then set aside.

STEP 2/3

Clean the appliance bowl and fit the Stir Tool.

Add oil into the appliance bowl.

Heat for 1 minute at 120ºC, speed Off, until hot.

Add onion, carrot, garlic, salt, sugar and bay leaves.

Cook for 5 minutes at 120ºC, on speed Stir 2, until softened.

Add the drained peas and stock.

Cook for 30 minutes at 102ºC, on speed Stir 2, until all liquid has been absorbed.

Let cool for 30 minutes.

STEP 3/3

Fit the Knife Blade to the Food Processor attachment.

Add contents of the appliance bowl into the attachment.

Add olive oil, lemon zest and juice.

Blend for 2 minutes on speed 2, until smooth.

Remove the attachment from the machine and let the dip cool.

 

 

Serve.
