150 grams yellow onion, peeled, diced
1  celery stalk, peeled, diced
75 grams carrot, peeled, diced
0.25  fennel bulb, trimmed, diced
1  garlic clove, peeled, stem removed, crushed
1 tbsp. tomato puree
0.25 tsp. cayenne pepper


60 grams white wine


600 grams fish stock, hot


300 grams salmon fillets, skinned, cut into 2cm cubes
100 grams cod fillet, skinned, cut into 2cm cubes
1 tbsp. lemon juice
20 grams fresh parsley, destalked, finely chopped


Instructions

STEP 1/6

Lift the Cooking Chef head and fit the heat shield

Fit the Stir tool to the machine

STEP 2/6

Attach the Cooking Chef bowl to the machine

Add Ingredients 1 (olive oil) into the Cooking Chef bowl, fit the splash guard

Heat at 100ºC on speed off for 1 minute until hot

STEP 3/6

Add Ingredients 2 (onion, celery, carrot, fennel, garlic, tomato puree, cayenne) into the Cooking Chef bowl

Cook at 110ºC on speed Stir 2 for 5 minutes until softened

STEP 4/6

Add Ingredients 3 (white wine) into the Cooking Chef bowl

Cook at 120ºC on speed Stir 2 for 1 minute until fragrant

STEP 5/6

Add Ingredients 4 (fish stock) into the Cooking Chef bowl

Cook at 100ºC on speed Stir 3 for 13 minutes until the liquid has reduced

STEP 6/6

Add Ingredients 5 (salmon, cod, lemon juice, parsley) into the Cooking Chef bowl

Cook at 98ºC on speed Stir 3 for 5 minutes until cooked through

Season to taste
