Ingredients

Servings: 6
Makes: 9
For the filo pastry
250 g 00 flour
 pinch salt
100 ml water, warm
10 ml olive oil
  rice flour, as needed, for dusting


Instructions

STEP 1/6

Fit the Dough tool to the machine
Add ‘00 flour and salt into the mixing bowl
Mix on speed 1 whilst gradually adding warm water and olive oil

STEP 2/6

Once incorporated, mix on speed 2 for 1 minute
If mixture is too dry, add a tiny amount of water and mix again
The dough should be firm but not sticky
Wrap dough in cling film and set aside to rest at room temperature for 5 minutes

STEP 3/6

Attach the Pasta Roller attachment 
Adjust the setting to 0
Sprinkle some rice flour between the rollers

STEP 4/6

Unwrap the dough and divide into nine equal pieces
Cover with a damp tea towel and set aside
Take one piece of dough, flatten it and shape roughly into a rectangle
Dust lightly with rice flour

STEP 5/6

Start on speed 1 
Pass the dough through the rollers
Repeat passing the dough through the rollers, adjusting the setting each time until you reach setting 9
Place filo sheet onto a piece of parchment paper dusted with rice flour
Dust with rice flour and cover with a damp tea towel

STEP 6/6

Repeat shaping and rolling process with remaining dough pieces
Place each sheet of filo on top of the previous sheet, dust with rice flour each time and re-cover with the damp tea towel

 

To Use
Keep filo pastry covered with a damp tea towel if using immediately, or cover with cling film and chill in the fridge until ready to use


Filo pastry is suitable for freezing for up to 3 months
